In the food manufacturing industry, antimicrobial coatings have been used to prevent contaminants from shortening the shelf lives of products for decades. Now, researchers are testing whether food coatings can be made from natural edible substances. So far, results have varied. While it has been found, for example, that essential oils may have protective properties, they do not work when directly layered on fruit.
